Love is in the Air + Blueberry Buckwheat Bakes.

I made John oatmeal raisin cookies last night and one accidentally turned out heart-shaped!

First, I just wanted to say thank you to everyone who took the time to read John and I’s love story on yesterday’s post. I was excited to see how many views it received, and I genuinely enjoyed reading every comment that was left. What can I say? It warmed my little cookie-loving heart : ) So, thank you!


And if I hadn’t told you before, comments make my heart glad. So please, feel free to leave them whenever you want whether you’re answering one of my questions, reporting a typo, suggesting an idea, or just saying hello! I really like hearing from you all so please, comment away!


Breakfast…


I made Ashley’s buckwheat bakes and followed this recipe exactly!  (details later in the post).



I topped one with coconut butter,



one with peanut butter and honey,



and left one plain.


I enjoyed these lovelies in bed alongside some Stumptown coffee.




It was the perfect breakfast on this cold, snowy day.

Rewind to last night. Several things happened.


First, John got me roses! What a sweetheart. It’d been a kind of a long day for both of us and the weather was just miserable out, and we were cold, so it was kind of a “just because one of us needed something nice” gift. Regardless of the occasion, or non-occasion rather, he’s always so thoughtful toward me and it’s wonderful.



My husband is a jewel.



Second, I got a package in the mail!



Backstory: I have been drooling over Ashley’s buckwheat bakes since I spotted them last week on her blog, and after having trouble finding buckwheat groats at my local health food stores, I hopped online and ordered a few bags from Amazon.

If you couldn’t tell from the pictures, I’m a huge whole grains fan. Yyyyuuuuuuge.


It ended up being a pretty good bargain for the amount I got compared to what individual bags can cost at the store. I was soooo pleased to finally be holding them in my hands. All four of them!



Wow, I just realized I look like a total hippie in this picture. But since I’m secretly aspiring to become a hippie in real life, I guess I don’t much mind.


I made the muffins with my buckwheat today, but if I get my paws on a mini crockpot, I WILL be making one of these in the future…

…and maybe one every day for the rest of my life. Srsly.


Third, I made dinner! Go me.



BBQ chicken salads with homemade dressing and a side of steamed parmesan broccoli.



For the dressing, I simply mixed about 3 Tbsp. BBQ sauce, 2 Tbsp. A1 steak sauce, 5-8 shakes hot sauce, 1 1/2 Tbsp. water, a little garlic powder and pepper, and 1/2 Tbsp. olive oil. I whisked it up and it was enough for two whole salads. And even though it was a total experiment, I really liked it! It definitely made the salad even though the chicken turned out delicious by itself, too.



Fourth, I whipped up a batch of coconut butter because I’ve been craving it a lot lately.



Coconut butter is simply unsweetened shredded coconut finely ground in a food processor for about 10-15 minutes. That’s it! And it’s extremely delicious and rich in coconut flavor, which is awesome for coconut fans like myself.




You can put coconut butter on just about anything. Toast, muffins, oatmeal, bananas, cakes, fruit, etc. I made dark chocolate coconut butter before, which was rich and delicious, and you can find that recipe here. But this time I was just craving some plain.



And as you might have guessed, coconut butter is also delicious on a warm oatmeal raisin cookie.
