Ingredients:
These days we are waaaay too busy!! Your daughter has dance practice, son have a football game, and the hubby has to go to work. Nobody has time to sit down and have a nice meal and some good coversation. Many people are suprised by how little they know about the person they live with. The best memories are the ones surrounded by family. Have breakfast Cynthia's way and let me help you get back to creating those special memories!! With soy pancakes, homemade hashbrowns, and peach bellinis your family was have no choice but to sit(at least until their plate is clean). Use this weekend to show off these recipes along with some fresh fruit and protein, to chill out and relax, and spend time with family!!
PEACH BELLINI:
4 peaches or 4 cups frozen peaches(thawed)
1/2 cup-sugar
champagne or sparkling water
SOY PANCAKES:
1/2 cup-all purpose flour
1/2 cup soy flour
1 tsp-baking powder
A pinch of salt
1 egg
1/2 cup-buttermilk
1 cup of soy milk(regular)
1 TBSP-vegetable oil
1 TBSP-sugar
1 tsp-vanilla extract
Extra vegetable oil for cooking
HASHBROWNS:
10 red potato, diced
1 white onion, diced
1 to 2 sausage links, diced
salt and pepper to taste
4 TBSP-olive oil

Preparation:
Bellini......
1. Peel and wash fruit.
2. Cut in chunks and place in a food processor with sugar.
3. Puree mixture until smooth.
4 Strain puree through a fine strainer.
Make sure that the puree and champagne is nice and cold!
5. Divide puree equally into glasses.
6. Pour champagne into glasses and enjoy!
Soy Pancakes.......
1. In a bowl, combined all purpose flour, soy flour,salt, baking powder, and sugar.
2. In another bowl, combined buttermilk, vegetable oil, soy milk, and vanilla extract.
3. Pour the wet ingredients into the dry and mix until just combined.(mixture will still have some lumps this is normal)
4. Heat oil in a pan over medium-high heat.
5.Using a 1/4 measuring cup drop batter into pan.
6.When bubbles start to form on the top flip pancakes.
7. Let brown on the other side, place on a plate, serve with hot syrup and eat!!
This recipe make 1 pancake each for 4 people, so if you want more double the recipe!
Hashbrowns......
1. Wash the potatoes and onion, then dry them well.(I wash mines before and after cutting)
2. Heat olive oil in a skillet on medium-high heat, add potatos and onions.
3. When onions start to get soft and tender, add sausage.
4. Cook mixture for 15-20 minutes or until potatoes are tender and brown.
TIPS:
*For the bellini, if you use a blender add about a tablespoon of liquid.
