Mango Rice / Mamidikaya Pulihora
Rice mixed with grated raw mango is a specifically prepared on ?Ugadi? ( The Telugu New Year celebration), in Andhra.Yesterday I made it for Ugadi festive meal.It is easy to make and delicious to eat. Ingredients:- 2 cups Cooked white rice (each grain should be separate) 3 cups Grated raw green mangoes (peel skin) Adjust according to your taste 2 tbsps Peanuts Salt to taste 3 tbsp Oil 1 tsp Mustard seeds 1 tsp Cumin seeds 1 tbsp Chana dal / Bengal gram dal 1 tbsp Urad dal / Split black gram dal 5 dry red chillies 6 slit green chillies A pinch asafoetida (Hing) 1/4 tsp turmeric powder few curry leaves Method:- Peel the skin and grate the unripe mango. Measurement is: for 1 cup raw rice - 2 cups grated mango (Adjust the quantity to suit your tastes). Add turmeric to the grated mango and keep it aside. Cook rice with 4 cups water. Add 1 teaspoon of oil to the rice while cooking so that grains won?t stick..Each grain should be separate. Don?t cook to mush.Cool the rice in a wide plate so that the rice doesn?t stick together.Apply a teaspoon of oil to the rice. In a pan, heat oil. Add and toast the ingredients One by one, until pale gold, in this order cashews,Peanuts,Chana dal (presoaked in water for about 30 minutes before),Slit green chillies ,Curry leaves ,red chillies,Mustard seeds and cumin seeds,hing.Toss them for a few seconds.Remove from heat and keep it aside. Spread the cooked white rice on a wide plate, sprinkle salt , add grated mango with turmeric and add the seasoning and use your hand or big spoon to combine well till the seasoning is well blended with the rice. Adjust salt. Serve hot with papad ,vadiyalu,pachadi of your choice. Enjoy Tangy Mamidikaya Pulihora !!! related searches : Mango
