Lemongrass turmeric rice

This is definitely the way to elevate plain rice into something special.


Number of serving: 4
1 1/2 cups rice - washed and drained

1 cup thick coconut milk

1 1/2 tsp turmeric powder (or as preferred)

2 lemongrass - bruised

4 shallots - chopped

4 garlic - chopped

2 tbsp oil

salt to taste


  • Fry shallots and garlic in heated oil to soften.
    Add lemongrass and rice.

    Give a couple of stirs to combine these ingredients.

    Put rice into rice cooker, pour cocounut milk and 2 cups of water.
    Add salt and stir to mix the ingredients.

    Once rice is cooked, stir again to fluff up rice with fork or chopsticks before serving.



Awesome recipe, i will certainly be preparing this more often as turmeric is very good for you but tastes to me a bit like poo, the lemon grass rescues it, awesome man!!!

Yum and bravo! Coconut milk is an excellent source of fat (lauric acid) which studies have shown lowers blood cholesterol. Look it up! Turmeric is one of the healthiest ingredients you can use too. :)

Too high in carbohydrates (that is a lot of rice!) and fat (coconut milk is too high in fat). Recommend using brown or long-grain rice; 1/4 cup coconut milk, 3.4 cup fat-free Half and Half. You also could use less oil, maybe 1 tbsp + 1 tsp.
