Coriander Rice and Okra Curd Pachadi

I tried both the recipes from Edible Garden for the Blogger Marathon event.Both are perfect combo and i throughly enjoyed it.
Coriander Rice
Ingredients:2 cups Basmati Rice,Cooked 2 tsp Ghee
1 tsp Chana dal
1/2 tsp Urad dal
A pinch hing
Few Curry leaves
1/4 Green peas,Fresh/frozen
1/4 cup Chopped coriander leaves
10-15g Cashew nuts
Salt - to taste
To grind:1 bunch Fresh coriander leaves
1 Medium sized Onions ,Chopped
2 Green chillies
Method: Heat the ghee in the kadai and fry the cashew nuts,till it become light brown.Remove it from flame and cool aside.
Grind the Coriander leaves,chopped onion and green chili with little water.
Cook the green peas till soft,if you are using the frozen one,no need to cook them.You can use them directly. In the same kadai,temper the mustard seeds,chana dal,urad dal,hing and curry leaves,till golden brown.
Now add the ground coriander paste,cooked green peas and salt,blend well.Cook them for 2-3 mins till raw smell goes.
Add the cooked rice into the kadai.Switch off fire and mix in the rice while the paste is still hot.
Garnish with cashew nuts and chopped coriander leaves.Enjoy the meal.
Lets Prepare the side dish for this Coriander rice,Okra Curd Pachadi.
Ingredients:
10 okra/Ladies Finger
1 small Onion,finely chopped
1 tsp Oil
1/4 tsp Mustard Seeds
1 small Onion,finely chopped
1 tsp Oil
1/4 tsp Mustard Seeds
1/2 tsp Urad dal
1 green chilli
1 cup thick Curd
1/4 to 1/2 cup Water
Salt to taste
1 green chilli
1 cup thick Curd
1/4 to 1/2 cup Water
Salt to taste
Method:
Cut Okra into thin Pieces.Beat the curd with salt.
Heat oil, add mustard seeds and urad dal.When they start crackle,add the onions,green chilly and okra.Fry them for 8-10 Min's until the onions are golden and the okra is fried and crisp.Let it cool for Sometime.
Add the Fried Okra into the curd and serve chill with Coriander/any rice.
