Mini Banana Cupcakes with Brown Butter, Cinnamon, Cream Cheese Frosting
Wow, that's a long title. But I assure you, these mini cupcakes are worth the long title, they are outstanding. My son turned the big THREE this week. I watched him during his birthday dinner and thought how quickly time passes. It felt like yesterday I found out I was pregnant and now he's already three. My son means the world to me. I've never loved someone so unconditionally. The love you have for your spouse is different from the love you have for your children. Don't get me wrong. I have much love for the hubs. But there's something special when it comes to your children. I love them both dearly and I'm thankful everyday that I have them in my life. Many years ago, I had a conversation with one of my mentors about marriage and children. This was before I was married so I didn't quite understand what he was referring to. But he told me that although he loves his wife dearly, the love he has for his child was unique. I now understand what he meant. What are your thoughts? This is only an opinion and everyone is entitled to their own. So in celebration of my lil man's birthday, I made mini cupcakes for his pre-school class. Part 1 of my loves birthday celebrations. When I dropped my love off at school today, some of his classmates yelled out CUPCAKES! They didn't care about the birthday boy. They only had eyes for the moist banana cupcakes topped with a creamy brown butter, cinnamon and cream cheese frosting. I don't blame them. In the eyes of a toddler anything sweet topped with delicious frosting is heaven. And the mickey mouse topper, forget about it, instant hit. Printable Recipe Ingredients Banana Cupcakes Courtesy of Martha Stewart with Modifications 1-1/2 Cups All -Purpose Flour 3/4 Cups Sugar (I used 1/2 Cups, the bananas were really sweet) 1 tsp Baking Powder 1/2 tsp Baking Soda 1/4 tsp Salt 1/2 Cup (1 Stick) Melted Butter 1-1/2 Cups Mashed Ripe Bananas (about 3-4 bananas) 2 Large Eggs 1/2 tsp Vanilla Extract Yields about 30-33 Mini Cupcakes Directions 1. Preheat your over to 350º. Line a muffin pan with paper liners. I used a mini muffin pan. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda and salt. 2. Make a well in the center of the flour mixture. Add the butter, bananas, eggs and vanilla. Stir to incorporate flour mixture but do not over mix. I used a cookie scooper to place the batter into the lined muffin pan with a little over 3/4 full. 3. Bake for about 20 minutes or until toothpick inserted in the center somes out clean. Remove cupcakes from the pan and allow to cool. Ingredients Brown Butter, Cinnamon, Cream Cheese Frosting 8 oz Cream Cheese at room temperature 5 tbsp Brown Butter, Cooled 2-1/2 Cups Confectioners Sugar 1 tsp Vanilla 1/2 tsp Cinnamon Directions 1. Make your brown butter (click the link for more details). Cut the butter into slices. Place in stainless steel pan and allow to cook on medium/low heat, stirring frequently until you smell the nutty aroma of the butter browning and when the butter tuns a slight golden color, remove from heat and pour into bowl. 2. Mix all the ingredients in your stand alone mixer or by hand until fully incorporated. Place the frosting in a piping bag about 3/4 of the way, placed in a tall cup for convenience. Now you're ready to frost your mini cupcakes. Use whichever tip you prefer or simply slather on with a knife or spatula. These little babies were a total hit at school. The teachers loved them as much as the kiddies did. My love will officially celebrate his birthday this weekend with family and friends. This also means, I have a lot to do.
