Good Afternoon and Happy MLK Day!

I hope most of you had the day off and have enjoyed the long weekend.  I actually am working today but I have one of those fun jobs where I am actually excited to see my boot campers and clients!  I also have had the best of both worlds today, I got to work and then come home and hang out with my sister and her family as well as play with the kids and it has turned out to be the most gorgeous day here in Austin.  It is 67 degrees, downright balmy!  We just got back from taking "Gumbo" (our dog) on a walk and I am hot. 

The weather here in Texas is crazy, one day it is 34 degrees and the next it is 67.  I am not sure what I am going to do if we end up having to move to a cold climate, my blood has definitely thinned but I suppose you just rise to the occasion and deal with it.

So we had a major Mandola's Italian Market Feast yesterday, pizza, pasta, salad and cupcakes!  Yikes.  I need to cleanse the system a lot of rich food. 

I started the morning off with a classic bowl of oats topped with Dried Cherries, Apricots and Pistachios. 



Dried Cherry, Apricot and Pistachio Salba Oats

1/2 cup rolled oats
1/2 cup Mootopia Skim Milk
1/2 cup water
1 tbsp Salba Smart


Combine above ingredients in small pan and cook over medium heat for 4- 5minutes.  Remove from heat and top with:

1 tbsp of Dried Cherries
1 tbsp Dried Apricots
1 tbsp Pistachios
1 tsp turbinado sugar

Enjoy!

This was a nice change of pace from the normal 'whipped' banana and pear almonds oats and I enjoyed every bite.

So you are probably going to think that I am the hugest pig in the world but I did indeed make yet another dessert.  To my defense, the kids requested these.... they were not the biggest fan of the cupcakes... word got out that there was zucchini and beets in them and all the sudden they did not like them as much.  Grr.... leave it to my hubby to spill the beans. 

I ended up making a healthier version of Rice Crispy Treats.  These are so easy to whip up and the kids really did enjoy them.


 
 
Healthy Rice Crispy Treats
 
3/4 cup natural peanut butter
1/2 cup of Brown Rice Syrup
1/4 cup of honey
6 cups of Brown Rice Crispy Cereal
 
1 cup of semi-sweet chocolate chips

Combine peanut butter, rice syrup and honey in a medium pot and cook over medium heat for 1-2 minutes until thoroughly combined.  In a big bowl, add 6 cups of cereal and pour peanut butter mixture on top and stir to combine.  Pour mixture in 9 x 12 in pan that has been sprayed with cooking spray.  Press mixture into pan.  Put chocolate chips in microwave safe dish and microwave for 45-60 seconds, stir until melted.  Pour chocolate on top of the crispy treats and smooth over with spatula.  Refrigerate until ready to eat.

I have not indulged in one of these yet but I have heard that they are "Awesome!"  

Lunch was another one of my favorites-- Almond Butter & Raspberry Jam on an Ezekiel English Muffin.  



Time for me to prep for my evening clients and Steve is making dinner so I shall be surprised.
