Vegetarian stew
Let's prepare a hot, hearty and comforting meal, that’s the promise of this vegetarian stew! Very easy to make, it will be rich in vegetable proteins thanks to the addition of white beans. Without forgetting the scent of tomato sauce, black olives and freshly added parsley before serving! Come on, enough talking, we'll let you try ;-)

Preparation
- Chop the onion and garlic cloves then brown them in the pan with a little olive oil for 5 minutes.
- Add the white beans, tomato sauce, corn, oregano, Cayenne pepper and salt. Mix well and simmer for 15 minutes over medium heat.
Meanwhile, also cook the rice in a saucepan with boiling water. - Drain your rice, place it in a deep plate with the vegetarian stew in the middle.
Sprinkle a few slices of black olives, parsley, add a slice of lemon and enjoy!

Placed in an airtight container, you can keep it in the refrigerator for 2-3 days.
Can I freeze this stew?
No problem ! To defrost it, place it in a saucepan or pan and stir over medium/low heat.
What can I replace white beans with?
You can replace them with red beans, lentils or even chickpeas to keep this recipe vegetarian. Otherwise, you can replace them with pieces of chicken.
What can I replace the parsley with?
With coriander or even chives.
