My Thanksgiving Dinner ? A little late!

I did several hours of cooking on Thanksgiving – for myself and my boyfriend – and I discovered a few things:


1. It’s very difficult to make a Thanksgiving dinner for only 2 people.


2. Stores do not sell hams or turkeys small enough for only 2 people to consume (ham nuggets and turkey breasts aside)


3. Even though there are only 2 of you, there is DEFINITELY still a need to make a normal amount of mashed potatoes to feed approximately 10 people.


4. Martha Stewart’s Triple-Chocolate Pumpkin Pie recipe makes enough crust and filling for about 2.5 pies!


Here was the menu:


Coca-Cola & Molasses Glazed Ham





This turned out pretty well. The glaze was very sweet and delicious and the onion that I cooked the ham with I later used to make a delicious gravy. I took the onion and caramelized it, then I added some flour, and a bit of oil and cooked it for a minute or so, and then I added some of the ham cooking liquid and some chicken stock in order to round out the gravy. I love ham gravy, and this was delicious!


Sauteed Asparagus


Sour Cream Mashed Potatoes





This recipe made delicious mashed potatoes. I like mine with a little tang, so I added some organic sour cream to them. These were very yummy-  the Yukon Gold potatoes were perfecto.


Corn Pudding


This was no so good. In fact, I took one bite and immediately threw the entire pan into the garbage. No good!


Cornbread & Sausage Dressing





On the other hand, this dish was amazing! Thank you Martha Stewart! I used raw pork Italian sausage in this and it paired perfectly with the sweetness of the cornbread and the depth of the sage. Yum!


Triple-Chocolate Pumpkin Pie

Another wonderful Martha Stewart recipe. This pie turned out great! I did, however, have enough crust and filling for about 2.5 pies! This uses bittersweet, semisweet and milk chocolates. One is melted over the homemade graham cracker crust, another is folded into the pumpkin filling, and the milk chocolate tops off the pie in drizzle form. This was very delicious and very rich. A perfect match with a little whipped cream!
