Roasted shrimp with garlic and lemon

1/4 cup extra virgin olive oil

3 minced garlic cloves

1 cup Panko breadcrumbs

1/4 cup fresh chopped parsley

1 lb large raw shrimp, peeled, deveined, tail on

kosher salt and pepper, to taste

juice of one lemon

lemon for garnish


  • Preheat oven to 450 degrees F. Spray baking sheet or pan with cooking spray.
  • In bowl, combine the oil, garlic, parsley, breadcrumbs, salt, and pepper. Toss the shrimp in the mixture and work them until they are each covered well.
  • This works well to do 2-3 shrimp at a time. Bake for 8 to 10 minutes, depending on the size of your shrimp.
  • Serve immediately after drizzling them with lemon juice along with the additional lemon wedges.
