Oldie but Goodie, Rice Pudding
"It is my favorite in the whole wide world!"
That is the response you will receive if you ask an adorable six year old what she thinks of this rice pudding recipe. She also added that her MeMe makes it for her! Who is MeMe? Well, it depends on which child in my large family you ask. If a small child calls for MeMe, that child might receive three eager grandmas' at their side to assist them, buy for them, or feed them whatever their wish might be! With that said, this recipe will remind you of Grandma's house. The rich, heavenly, sweet, and gooey texture of this dessert is one of those that will remind you of childhood. In fact, when I did a Google search for Rice Pudding I found that it was referenced in the second verse of the seventeenth-century nursery rhyme, "Pop Goes the Weasel:" Half a pound of tuppenny rice, Half a pound of treacle. Mix it up and make it nice, Pop goes the weasel. Grandma Jo's Rice Pudding, provided by my Aunt Bonnie 3/4 cup Regular Uncooked White Rice 4 cups Milk 2 Eggs 3/4 cup Sugar 1/2 cup Raisins, optional 1 tsp Vanilla 3 tbsp Butter 1/2 tsp Nutmeg Preheat oven to 325 degrees. In a saucepan, cover rice with 1 1/2 cups of water and steam for 5 minutes. Keep an eye on it so it doesn't go dry. Add 3 1/2 cups of the milk and cook for about 5 more minutes, stirring so the milk doesn't stick and boil over. In a separate bowl, beat eggs, then add sugar and vanilla to the eggs. Stir the extra cold milk into the egg mixture, and add to rice. If desired, now is the time to throw in the raisins. Pour in a 2 quart casserole dish. Sprinkle with nutmeg, dot with slices of butter and bake for 50 minutes in your preheated oven. Now you've got choices, when you remove from the oven either let it sit and the rice will soak up the extra moisture or stir it up really good to speed up the process. I must say that when I make it, I can't resist but to stir it all up and eat it immediately, just in case you were wondering! Good golly, this is yummy goodness! This makes quite a bit of rice pudding. Since my husband is not a fan of rice that is sweet, he is more of a savory fan, I ate this entire dish myself in just two days.
