One Week of the 8 Week Challenge- COMPLETE!

Hi everyone!

Sorry for the super late post, I was a busy girl today! Today marks 1 week of my 8 week challenge. Last week I did all of my scheduled workouts and I feel great! I weighed in today and I'm down 0.8! I know its not much, but I'm not going for drastic here, if I lose 8 lbs in 8 weeks, I would be ecstatic. I'm more so going for consistency and commitment. I also might have more actual loss if I was counting calories closely, but I'm not doing that anymore.



It takes the joy out of eating for me. And it keeps me thinking about food ALL THE TIME. Now, I eat when I am hungry, I eat what sounds good, and is good for me, and I know that ultimately that will work!



Do you count calories? 



Now and then I plug in the numbers and I always am surprised to see how good they look when I'm not even planning and measuring like a maniac. I can honestly say that my brain feels serene when I think about food, and I haven't felt that way in a while!



So yesterday's quick recap. Joe and I spent the day doing things for the house. We bought a new area rug, a bookshelf, lamp, and some other small items. We've been saving up and waiting for these things, so it was great to get them! The house looks really nice :)



I also took a trip to Trader Joe's....MMMM



Food yesterday:

Breakfast- Flax Z Snacks with chocolate PP and coffee..boooring but delicious. Just ordered more from Netrition.com. (great prices and $4.95 flat shipping). They have everything.



This was today's breakfast too- FYI



For dinner .we made pasta! Joe had whipped up a homemade pot of sauce and meatballs on Saturday. He cooked up a tray of homemade manicotti (his uncle makes it), and I had some Carba Nada noodles. They were good, not manicotti good, but I felt good about my choice.

I also had some veggies on the side. (eggplant, onions, zucchini, baby portobellos) with some balsamic glaze on top. THIS STUFF is awesome! The brand I buy is called blaze. Its great on everything.





 

Dessert was fage, a berry mix (frozen and thawed in the micro) and a piece of 72% cacao dark chocolate







So that brings us to today.



Breakfast was the same AGAIN :)

Does anyone else do this?? What are your stand by meals?



Lunch was a wrap in a Joseph's Lavash using some Applegate Farms turkey I got at Trader Joe's. It is great. It has the texture of real turkey, and doesn't taste processed and over salted.





Inside was the turkey, a little shredded mozz, spinach, mushrooms and mustard





I baked it in the oven for a little bit, and ate it with 1/2 a piece of Trader Joe's baked tofu and 1/2 a big orange.





Not very colorful...



After the gym I had the best snack!

crumbled cranberry/apple muffin from TJ's (these have 80 calories and 13 grams of fiber)

dollop of TJ's peanut butter/flax spread (crunchy and delish!)

 





Now that's colorful!!



I'm planning on some salmon, quinoa, and veggies for dinner. I'll report back on that tomorrow though.
