Orange Cinnamon Honey Cranberry Sauce
I get bored with cranberry sauce far too easily. A few simple additions can perk this side dish up and add excitement to your plate. Also consider using this as a sandwich spread, an ice-cream topping or in a barbecue sauce. 1 cup honey 1/2 cup orange juice 1 lb cranberries, rinsed 1.5 tsp orange zest 1 tsp cinnamon Simmer the honey and orange juice over medium high heat until they reduce and lightly coat the back of a spoon. Add 1 lb of cranberries and reduce the heat to med-low. Cook for 5 minutes until the berries have burst and formed a jell. stir in the zest and cinnamon, and cook to desired consistency (no more than 10 more minutes.) I like my sauce chunky so I removed it from the stove after just 5 minutes. Cool for 5 minutes, stirring occasionally, then pour into a glass jar. Enjoy!
