INGREDIENTS :: ? 1 pound tomatoes, small cherry type ? 1 clove garlic, smashed ? 1 tablespoon extra virgin olive oil ? fresh or dried oregano ? dried red chili flakes ? 1 bay leaf ? salt and freshly ground pepperDIRECTIONS :: Preheat oven to 180 degrees. Wash the tomatoes and slice lengthwise. Toss all ingredients together and place on a sheet pan. Bake in oven for hours. The amount of time depends on the size of the tomato. Tomatoes should still have some juice in them.
