Peppermint Bark Chocolate Fudge Cookies
I've made two separate trips to Costco this month. Just to buy their 2 pound tubs of Peppermint Bark. Just to make these cookies. Yes, that means I've gone through four pounds of peppermint bark, made five too many batches of cookies, and I've practically eaten my weight in peppermint bark, all in a matter of weeks. (Now you really understand the sugar shock I'm going through). I sent these with my husband to work a few weeks ago and I hear some of his co-workers have been waiting for the recipe. Wait no more my friends. Go grab your 2 pound tub of peppermint bark from Costco and get to work. (Ok, you don't really need to buy 2 pounds of it from Costco. You only need about 2 cups of chunks of peppermint bark per batch of cookies. So I guess you can use your own favorite brand or home-made bark. But I'm telling you, the Costco stuff is good!) Peppermint Bark Chocolate Fudge Cookies 2 1/4 c. flour 1 tsp baking soda 1 c. butter, soft 3/4 c. brown sugar 1/4 c. white sugar 1 small package instant chocolate pudding 2 eggs 1 tsp. vanilla 2 c. chopped Peppermint Bark In a small bowl combine flour and soda and set aside. In another bowl, cream together butter and sugar. Beat in pudding mix until blended, then eggs and vanilla. Add flour and soda mixture to wet ingredients. Stir in chunks of peppermint bark. Using a cookie dough scooper, place dough on a baking sheet lined with parchment paper. Bake at 350 degrees for 8 minutes. This is makes them slightly under-baked, but makes them nice and fudgy! Let them cool for 5-10 minutes before placing on a cooling rack. If you try to move too early, they might fall apart. Let cookies cool completely on cooling rack then store in air-tight container.
