Unroll the puff pastry and cut 8 slits (about 4 cm each) along the edges.
Spread the apple purée over the puff pastry, then fold the cut edges to form triangles. Press the tips to seal them.
Wash and slice the peaches and apricots into thin slices, then arrange the slices side by side against the base of the triangles. Brush the triangles with the beaten egg.
Bake for 25 minutes at 350°F (180°C). Let cool, then place the raspberries and blueberries in the center of the tart. Add some mint leaves among the fruits.
