Red Quinoa, Edamame and Dried Cherry Salad
![]() Good Evening! I hope everyone had a great day. My day ended up being fun, I scrapped the whole clean/organize the garage idea, threw away some boxes and swept, and called it a day. Emmet was invited over to a friends house so Zoe and I decided to go and get our nails done and go grocery shopping. Two of my favorite things to do. Zoe is very much the girly girl and has been bugging me to get her nails done for weeks now and today seemed like a good day to go and do it. Anything to get out of cleaning the garage. She got Neon Green fingernails and Turquoise toenails. She is young and cute and can carry it off! I did work out and ended up running on the treadmill for 45 minutes and then did a 20 minute weight circuit. I admit I was not motivated and procrastinated for a good hour before finally getting my b_tt on the machine. But I felt great afterwords, and was happy I persevered through that bout of laziness. Before heading out and about, I had my new go-to meal, the Pumpkin Parfait. I have to tell you how much I love this. I am not a big fan of pumpkin pie and pumpkin oats are just so-so and so I am surprised by my discovery of pumpkin love. This parfait is AWESOME and of course, it does have Go Lean Crunch in it so that makes it even better in my eyes. Pumpkin Crunch Parfait 3/4 cup Fage 0% Greek Yogurt 1 tsp honey 1 tsp pumpkin pie spice 1/2 cup of Go Lean Crunch Cereal, divided 1/2 cup of pure pumpkin In a small bowl, mix the yogurt, honey and spice together. Top with 1/4 cup of Go Lean Crunch Cereal, layer with pumpkin and top with remaining cereal. Enjoy. ![]() I also went ahead and whipped up my dinner for this evening. I am afraid that my kids don't like this one but I now just make individual servings of this amazing Red Quinoa, Edamame and Dried Cherry Salad. My kids love the dried cherries and edamame but not together, that is the best part! Again with the sweet and savory combo, but the flavors of the salad are great, tart dried cherries, crunchy bell peppers, protein packed edamame and red onions bring this salad together. Red Quinoa, Edamame and Dried Cherry Salad 1/4 cup of red quinoa 1/2 cup of water Bring water and quinoa to a boil in a small saucepan, cover it and reduce heat to low. Cook for 15 minutes or until water is absorbed. Remove from heat and let sit. Meanwhile prep the following: 1/2 cup yellow bell pepper, diced 1/2 cup edamame, cooked according to package directions 1/4 cup red onion, diced 1 tablespoon dried cherries Mix cooked quinoa with above ingredients and dress with: 1 tablespoon balsamic vinegar 1 tablespoon dijon mustard 1 tsp olive oil salt & pepper Enjoy warm or cold. I put mine in the fridge to enjoy for dinner. I topped with some fresh green onions and enjoyed every little bite this. ![]() So tomorrow is my morning off and I am excited because I already know what I am having for breakfast and that I am going to go to a Bodhi Vinyasa class. Yah! I am teaching again soon and even though I do my mini morning practice daily, I like going to public classes to pick up tips and techniques and to expand my own knowledge.
