Salmon burgers with cilantro mayo + vote!
Happy Monday! I hope everyone had a wonderful weekend and is ready for another great week 5-day-countdown-until-the-weekend! A yummy, quick, and healthy dinner that with just a little bit of prep work (that can be done the night before!), you can be eating within 30 minutes of walking in the door. Served with a side of tots. Obviously.
Salmon Burgers adapted from Annie's Eats makes 4-5 burgers 1/2 cup red bell pepper, diced 6 tbsp breadcrumbs 1 clove garlic, minced 1 lb salmon, skinned, boned, and roughly chopped (I would buy the salmon already skinned) 3 tbsp green onion 1 egg white 1 1/2 tsp soy sauce 1 tsp fresh lemon juice 1/4 tsp salt 1-2 tbsp olive oil 1/2 cup mayonnaise 1/3 cup cilantro, chopped 1 clove garlic, minced dash cayenne pepper squeeze lemon juice Hamburger buns Tomato Lettuce Onions Directions: In large bowl, combine red pepper, breadcrumbs, salmon, green onion, and garlic. In small bowl, combine egg white, soy sauce, lemon juice, and salt. Whisk to combine, then add to bowl with salmon mixture. Combine thoroughly. Form mixture into 4 large patties, or 5 medium patties. In large skillet, heat 1 tbsp olive oil over medium-high heat. When hot, add patties and cook approximately 5 minutes each side, until cooked through. Place burgers on buns with mayo and top with lettuce, tomato, and onion. Serve with tator tots. related searches : Salmon
