Scallion Pancakes

By orange ideal (Visit website)

Sometimes when you are in one of those rotten moods you just need to do something to distract yourself. And sometimes, when your friends are in those moods, you’ll pull out all of the stops to make that happen. That’s basically how these scallion pancakes were born about a month ago. At first, when my roommate told me she was craving scallion pancakes and asked if we could make some for dinner I laughed. I figured there was no way that scallion pancakes were an at-home type of recipe.

Turns out, they aren’t so tough after all. After some quick searching on google, I found out that they’re quite easy. So combining multiple recipes and tips, we invited some friends over for dinner and set out to make scallion pancakes. They make for a great appetizer!

Scallion Pancakes

Makes about 6 pancakes, adapted from Big, Bold, Beautiful Food

2 cups flour

3/4 – 1 cup hot water

1/2 tsp. salt

Sesame oil

Scallions, finely chopped

Vegetable oil for pan-frying

Pour hot water into the flour and stir until dough begins to form. Remove dough from bowl and knead on the table until the dough becomes smooth (it feels almost like silk at this point). Add more water or flour to compensate for dryness or wetness respectively. Cover and set aside for at least 30 minutes, if not more (if you want, you can also refrigerate for later use).

Once the dough has woken up from its nap, form it into a log and cut it into six parts. Using your hands, flatten each part into thin discs one at a time. Leave the remaining dough covered. Brush each disc with sesame oil and sprinkle a bit of salt. Then add scallions. Roll the discs, with the scallions inside, into a cylinder and then shape the cylinder into a coil. Flatten the coil into a thin disc again.

Place the disc into a hot oiled pan. Cook until golden brown, about 2-3 minutes, and then flip. Place on a paper towel to remove excess oil before serving. Cut into wedges and serve.

Dipping Sauce

2 parts soy sauce

1 part vinegar

1/2 part sesame oil or chili sesame oil

1 part sugar (optional)

Combine ingredients and serve.
