Scrambled paneer(Indian cottage cheese)

By Dew Drop In The Kitchen (Visit website)

Whenever I write a post on Friday I will be all ecstatic. I seriously look forward to weekend though there is absolutely nothing I do. Cooking and a little bit of reading is what weekends mean to me :D What a stark difference between me in previous post and this one.
Go through this link. It is quite interesting. A friend sent me this and she said it reminded her of me. I eat spicy food tad too much but this one is just unbelievable.
So how the dish I mentioned in title happened. There was some paneer left after making paneer masala which I already blogged. I didn't want to try any elaborate process and made this simple one.
Description: Grated/Crumbled paneer sauteed with onions and tomatoes rightly blended with Indian spices.

Serves - 2
Time - 10-12minutes

Ingredients:
Paneer - 125gms
Tomatoes - 2(chopped)
Onion - 1big(chopped)
Dhania powder/Coriander - 1/2 tea spoon
Garam Masala - 1/2 tea spoon
Garlic 3-4 pods crushed
Salt - 3/4 tb spoon
Red chillies -2
Oil - 1tb spoon
Coriander - garnish
Turmeric powder - 1 big pinch
Chilli powder - 1/2 tea spoon
Green chillies - 1-2
Lemon juice -(suggested garnish)

Procedure:
1. Heat oil in a pan/wok. When it is hot enough add red chillies and garlic. Fry them for 30 secs.
2. Now add onions and chillies. Saute them till onions turn transclucent. Now add turmeric, dhania and chilli powders. Fry for a few seconds.
3. Now add tomatoes and salt and combine. Close the lid and let the contents cook for 3-4 minutes.
4. When the tomatoes turn mushy and oil starts to separate, add grated/crumbled paneer. Add garam masala and coriander and give a mix. Let it fry for a minute and switch off the flame.

Ain't it easy? You can use this as a filling for sandwiches and rotis. Squeeze in some lemon juice if you want that tart flavor and there it goes.
Have a great weekend and guys, do something fun unlike me.
