Simple Peach Salad, "Granny's Recipe"

These individual Peach Salads nestled in iceberg lettuce bring so many memories of my Mother serving them. My Mother was such a creative and frugal cook. She could take whatever we had in the refrigerator or pantry and serve a fantastic meal that was her crown of glory. Priceless. I am so grateful for all the dishes she has passed down to me. If she was short on peach haves, she would sometimes make these with pineapple slices or Pear Haves that were equally delicious. These are a great light salad that would pair well served with a rich main dish, or as I remember , as a delicious dessert. There is one thing for sure they are great either way!

Simple Peach Salad

1 16 oz. can peach halves, drained well
1/2-3/4 cup Miracle Whip or mayonnaise
1/2-3/4 cup shredded cheddar cheese
paprika

Take the iceberg lettuce leaves and lay them out on a plate or platter. Lay the peach halves on the lettuce, hollow side up. Add a dollop of Miracle Whip or mayonnaise into the hollow of the peach. Top the peaches with a tablespoon of cheese. Lightly sprinkle paprika on top. Place in the refrigerator and serve cold.
