Simple Supper....Solo
At the end of the day my Husband called me to tell me he had a work function this evening and he would be home late. I needed to go to the store after school to get some things I needed for the dinner I wanted tonight. Now that I would be flying solo in the parenting department I knew this wasn't going to work because I had to have my son back out by 5:30 for practice.
So on my way home I asked my youngest what he wanted for dinner and told him my dilemma. He said "Mommy, you make your best dinners when you are in a hurry and you throw something together"! I almost cried. He noticed. It is one thing for your family to slurp down the food you make but it is another for one of them to acknowledge that you were in a hurry and you tried your best to get a meal on the table. Basking in the glow of his compliment I went home with a renewed vigor and I was up for the challenge of making something from very little. I surveyed the contents of the pantry and refrigerator. I saw eggs, cheese, bacon and croissant dough. An idea formed and this is what I made...I am almost embarrassed to show you this. It is almost like showing a recipe for making cereal :) Egg and Cheese Croissants 1 roll of big and flaky Pillsbury Croissants 4 eggs scrambled in a skillet. No need to add butter or milk. shredded cheese of your choice 2 TB butter, melted Preheat oven according to package directions. ? ? ? Prepare a cookie sheet with parchment. Unroll the croissants and place flat. You may need to press out a little. Roll up leaving no gaps and brush with melted butter Bake for 13 minutes or until golden. My youngest son's plate.
