Snack by Monica

Today’s snack is brought to you by the lovely Monica of Run Eat Repeat.

I had the pleasure of meeting Monica for the second time this past weekend when we were both running the Disney Marathon.

Anyways, Monica was kind enough to bring me a goodie bag of Trader Joe treats all the way from Maryland. The star of which was this delicious bag of Dark Chocolate Nutty Bits (not to be confused with dark chocolate naughty bits hehe )

I started with a 3 piece serving for my afternoon snack.

But they were sooooo good I happily went back for two more.

My afternoon mission to find a hot tub was major fail. :(


I went to three other apartment complexes and two hotels. Both the hotels needed hotel keys to get to the pool area and the one complex I found with a hot tub was cold. However, tomorrow is another day and I will not give up!


I had a ton of random left overs in my fridge to use up for dinner. While I was on my hot tub mission my idea of what to turn those left over into for dinner kept snowballing out of control until I ended up with this tasty crazy concoction.

It was my take on fried rice.


In a pan I sauteed shredded cabbage, mushrooms, asparagus, and tomatoes until all the vegetables were soft. Then I added left over rice and pumpkin spice chickpeas. I pushed everything to the side of the wok and fried an egg before combining it all together. I finished it off with a dollop of hummus and sesame seeds.

The hummus, might sound odd, but if you close your eyes once the hummus is mixed in with the fried rice it tastes almost like the yummy shrimp sauce they give you at japanese steak houses!


The combination was really tasty and took less than 10 minutes to put together.


I was really craving fruit for dessert, so I filled a small bowl up with strawberries and topped it with a scoop of tart frozen yogurt and granola.

The strawberries really hit the spot. :)


So far my plan for a lazy weekend is off to a raging success. It is now 8:02 pm and I am already contemplating going to bed. I know – I’m a cool one. I’m just soo tired, my bed is calling my name!
