Snow Day in Austin, Texas
Good Afternoon! It has been quite a hilarious day in the fact that my kids have had a half day of school due to a few snow flurries that briefly blew in. I admit it was quite chilly this morning while I was teaching boot camp but I had 5 people show up with their kids in tow. That is dedication. So after boot camp I was able to train a client and then go pick up the kids and then we have had a wonderful day at home doing Christmas stuff and playing in the snow for two seconds. Snow Flurries in Austin, Tx The kids were actually disappointed that they had to leave school because Emmet was going to dissect a squid today in science class. It has be rescheduled for Monday and I get to go in and help so I can't wait. So we have spent the afternoon decorating our tree and playing Christmas music so it has actually turned out to be a good day. My Martha Stewart skills need a little improvement but the tree is pretty and our theme sort of worked.... A few of our favorite ornaments are: So now on to the good stuff-- the food! I started out my morning with a fabulous bowl of oats because I knew I was heading out into the tundra and needed something warm in my belly. Nothing is better for that than a warm and comforting bowl of Banana Raspberry Salba Oats 1/2 cup of rolled oats 1/2 cup of Mootopia Milk 1/2 cup of water 1/2 banana, sliced 1 tbsp of Salba Combine ingredients in small pot and cook over medium heat for 4-5 minutes. Spend the last minute stirring vigorously "whipping" the banana into the oats. Remove from heat and top with: other 1/2 of the banana handful of fresh raspberries Sprinkle of Mix My Granola Abby's Stash Enjoy! Now the best part of the day was that I came home to a package at the front door that I was soo excited about. I ordered an assortment of Nut Butters from Naturally Nutty and I could not wait to try the Pepita Sun Butter for lunch! I would highly recommend ordering nut butters from Naturally Nutty. I have tried some of her peanut and almond butters and they were awesome. Lunch was outstanding. I made a Pepita and Pumpkin Butter Sandwich and I loved everything bite of it and can't wait to have another one tomorrow. Pepita and Pumpkin Butter Sandwich 1 tbsp of Naturally Nutty Pepita Sun Butter 1 tbsp of Stonewall Kitchen Maple Pumpkin Butter 1 Food for Life Ezekiel Cinnamon Raisin English Muffin Sprinkle of Pepita Seeds Yum! Dare I say that I am actually in the midst of making another King Cake this time with a Praline Filling. I am a total glutton for punishment but if I am going to be giving these out as gifts I would like to perfect the recipe. I think it is kind of fun and am not sure how the one with filling will turn out. I really need to channel my baking skills into something other than having baked goods at home all the time. It can be hard to resist "trying" what you make! I have been exercising and actually Finally got down to my pre- Thanksgiving weight again only to go up again if I indulge in King Cake everyday. So far, I have been balancing my intake with exercise and healthy eating the rest of the day. As I have said over and over, I subscribe to the 80/20 model of diet and exercise. I am great 80% of the day but do have a 20% indulgence as well. I might have to change it to the 90/10 model at the first of the year but so far this is working for me. I am going to write a book entitled "How to Have your King Cake and Eat it Too." What do you think? Well, the kids are getting restless so it is time to intervene with a new project.
