- Boil the seaweed with 3 cups of water until it dissolves. Drain and pour back into the pot.
While its simmering, add the needed amount of sugar to be stirred in.
Once done, off the heat.
Remove about quarter of the seaweed mixture and pour into another bowl/container. Stir and mix the coconut milk inside.
Into a mould or a few smaller moulds (any size you prefer), add some of the cubed fruits, pour the mixture on top and let it set.
By now the other 3/4 of the mixture would have cooled down a bit. Into this, goes in the mashed fruit.
Once the first layer of mixture with coconut milk has hardened, pour this mixture to cover till the top.
Let is cool down and if you like it chilled, place it in the fridge.
Before serving, add the sliced mint leaves on top.
