Spaghetti Squash with Sausage
This is kind of an odd take on spaghetti with meatballs. It really bears no resemblance to spaghetti with meatballs, though that was the inspiration for this dish. It's relatively simple to make and only costs a couple dollars to feed two people. Since there's no real starch component to this meal, I served it alongside garlic-cheese bread. These bars were for dessert, and were the perfect close to the meal. Hope you enjoy!
1 spaghetti squash 1 can stewed tomatoes 1/3 pound fresh sausage, either crumbled into little "balls" or sliced 1 tablespoon lemon juice 1 teaspoon rubbed sage salt and pepper to taste 1 1/3 cup vegetable broth Cut the squash in half. Put the halves on a plate, cut side down, and microwave for 10-15 minutes. Let sit until cool enough to touch, then scrape the flesh into a saucepan. Add remaining ingredients and simmer over medium to medium-high heat until sausage is cooked through. Serves 2. related searches : Spaghetti
