Spicy shrimp stir-fry

Spicy Shrimp & Scallop stir fry is a staple in our house. We eat it with pasta, rice, or lentils. I season it with different flavors every time and it's always delicious. This dinner had a terrific side of lentils (cooked in chicken broth with salt, pepper, and ground garlic), and a fabulous spinach salad.

After marinading the shrimp and scallops (separately) in a bit of olive oil, salt, pepper, ground dried garlic (lots), and a ground chipotle pepper, I sauteed the carrots and brocolli until cooked but still crunchy, then sauteed the shrimp and scallops and voila, a terrifically simple and healthy dinner!

Who wouldn't want to eat this?
