Spinach blue cheese and cracked pepper omelet

I received some terrific feedback on my last post. It seems there are some StRoNg opinions out there regarding blue/bleu cheese. It definitely has a StRoNg flavor and a pungent aroma.I love big cheeses like this! I have yet to meet a cheese I don't like. I'd love to try my hand at making some from scratch like Natashya, Girlichef, and doggybloggy have done. I have a recipe in mind, we'll see if
