Strudel

After the snow, came the freezing and it was followed by the rain...

Who follows me since a while knows that I don't particularly love buttery stuff, so I decided to make this apple strudel, which is an pudding because it contains a lot of fruit, a bit of dough and no butter and it is so appreciate by everyone and especially in this period, with its cinnamon scent ... makes all so Christmassy :)







Ingredients for 6 people
250 gr. plain flour
warm water
4 table spoons of seeds oil
6 table spoons of honey
handful of sultana
2 table spoons rum
handful of almonds
3 digestive biscuits
cinnamon
icing sugar
zest of half orange and half lemon
make a dough with plain flour, seeds oil and and bit of warm water and kneed until you get a smooth mixture.

After that let it rest half an hour, wrapped in a wrapping film.

Pre-heat the oven at 190°C.





Now peel the apples and cut them in small pieces of the same shape.

Now soak the sultana into the rum.

In a mixing bowl combine apples, cinnamon, zest of half orange and half lemon, crushed almonds, and drained sultana.

Place the dough on a tea-towel and roll it out with a rolling pin until you get a very thin pastry with a rectangular shape.





Brush the inside of the pastry with oil (leaving the edges clean otherwise it won't close).







Add the crushed biscuits and then the whole mixture.





Now  wrap the strudel helping yourself with the tea towel, carefully closing the edges of it to avoid the mixture dropping off.





Place it on the oven tray with baking paper, do some diagonal cuts and bake for 40 minutes.

Now sprinkle with icing sugar and cinnamon.

Gives its best when served warm.

E dopo la neve, arrivò il ghiaccio e fu poi seguito dalla pioggia...

Chi mi segue da un po' sa che io non amo la cucina molto burrosa ed eccessivamente carica, così ho deciso di fare questo strudel che è un dolce ideale perchè  contiene tanta frutta, poco impasto e niente burro ed è apprezzato da tutti, specialmente in questo periodo che con quel suo sentore di cannella fa così tanto... Natale :)

Ecco la mia ricetta



Ingredienti per 6 persone



250 gr. di farina
acqua tiepida
4 cucchiai di olio di semi
6 cucchiai di mele
una manciata di uva sultanina
rum
una manciata di mandorle
3 biscotti digestive
cannella
zucchero a velo
scorza di mezzo limone e di mezza arancia


Faccio un impasto con la farina, l'olio  e acqua tiepida fino a che non ottengo un composto omogeneo, che lascio riposare una mezzoretta nella pellicola trasparente.
Nel frattempo accendo il forno a 190°C. Sbuccio le mele, le taglio a piccoli tocchetti tutti uguali, faccio rinvenire l'uvetta nel rum.
In una ciotola mescolo le mele, cannella, la scorza del limone e dell'arancia, le mandorle spezzettate e l'uva sultanina.
Adesso su un canovaccio, stendo l'impasto aiutandomi con il mattarello, dandogli uno spessore fine e  una forma rettangolare.
Spennello l'interno (ma non i bordi che altrimenti non chiuderebbero)  con l'olio, verso i 3 biscotti tritati e poi il composto.
Mi aiuto con il canovaccio per avvolgere lo strudel, chiudo bene i bordi, lo appoggio su un foglio di carta da forno, pratico dei fori in tralice e inforno per circa 40 minuti.
Spolvero con zucchero a velo e cannella.
