Puff pastry bites with tomato, cheese and Pesto!

Make something really delicious. So, out came the roll of puff pastry from the freezer, a tub of feta cheese and tomatoes.

  • Lay out the pastry on a flat surface. No need to roll out any more.
  • With a sharp knife, cut out rectangles - about 4x6cm
  • Place half a tomato (cut side down), a tiny block of feta and a sprig of thyme on top of the pastry. Repeat with all the other rectangles.
  • Brush the pastry with egg wash and bake for 10-15 minutes at 200 C.
  • Serve with little dollops of pesto and a few sprigs of fresh thyme.
