Unroll the puff pastry. Cut the ham into small pieces. Cut the puff pastry into 16 triangles. Place about 1 tsp of bechamel sauce at the base of each triangle.
Sprinkle grated cheese on top of the bechamel and then add a piece of ham on the cheese. Preheat the oven to 350°F (180°C).
Roll each triangle starting from the base to the tip. Pinch the ends to form the croissants.
Place the formed croissants on a baking tray lined with parchment paper. Brush with egg yolk.
Bake the croissants in the oven for 20 minutes at 350°F (180°C).
