Tamarind Chutney, Green Chutney, Mint Chutney & Red Chutney
Recipe Credit - Vimla Patil ( Author - Dal Roti ) Tamarind Chutney Ingredients 1/2 cup tamarind paste 1/2 cup jaggery 1/2 teaspoon red chilli powder Salt to taste Method Mix all the ingredients and gently cook till well blended and bright in color. You may add rock salt instead of normal salt. Green Chutney You will need 1 cup coriander leaves 1/2 cup coconut, grated 2 green chillies Juice of a lemon 1 tablespoon roasted channa dal 1/2 teaspoon cumin seeds Salt and sugar to taste Method Grind all the ingredients ( except lemon lemon ) into a fine paste. Finally add lemon juice and mix well. Mint Chutney You will need 1 cup mint leaves 1 cup coriander leaves 1 onion 2 green chillies 10 cloves garlic 1 teaspoon amchur powder ( dry mango powder ) Salt and sugar to taste Method Chop mint, coriander leaves, green chillies and onion. Grind finely with all other ingredients. Red Chutney Ingredients 10 dry red chillies 2 cups coconut scrapings 10 cloves garlic, peeled 1 teaspoon tamarind paste Salt to taste Method Grind all the ingredients to a dry, coarse paste.
