The Cake Slice Bakers Present...Key West Cake with Mango Mousse and Ginger Lime Cream
My first mistake was buying frozen mangoes, then trying to cook them and puree them....YUCK....It turned into a stinky, slimey mess. I had already made the cake and ginger lime curd, so I decided to proceed but substitute blackberries that I had pureed the day before. I also didn't have regular limes, but instead had key limes. It was my first time making a genoise, and I was overwhelmed by how dry it was (course, I left mine 'cooling' on the rack for several hours). All in all, probably a fantastic cake if done correctly. Done my way it was awful....in fact nobody wanted to eat it and it all got thrown away.
