Tomato thokku, Aloo paratha and Brinjal Kootu!

I bring for you some traditional delights..! Try and enjoy!

1. Tomato thokku!

I'v already posted a thokku recipe with garlic-tomato..! this is made out of only tomato..! Taste great! Enjoy!



Ingredients:

1. Ripe tomatoes - 2,
2. Tamarind paste - 1 tsp,
3. Salt - as needed,
4. Red chilly powder - 1 tsp,
5. Turmeric powder - 1/2 tsp,
6. Gingerly oil - 4 tsp,
7. Mustard seeds - 1 tsp.

To roast and grind in to powder:

1. Fenugreek seeds/Methi - 1 tsp,
2. Asefeotida - 1 tsp.

How to make this?

1. Roast and grind the given ingredients in to a fine powder.
2. Grind the tomatoes, tamarind paste, little salt in to a smooth paste without adding water.
3. Heat 2 tsp oil in kadai, splutter the mustard seeds, add the ground tomato paste and boil in a medium flame covered for 5mins.
4. Uncover, now the mixture would have become little thick, add the turmeric powder, red chilly powder, enough salt and mix well. Add the ground methi powder little and check taste and mix well.(becoz adding more of this powder will make the thokku bitter, careful)
5. Leave the thokku to boil in medium flame by adding little more oil. When the thokku turns thick right consistency, the oil floats on top. Add the remaining oil on top and switch off.
Convert to an air-tight container and relish for a week..!

Delicious for curd rice/chappathi/dosa and idlis..!;)

2. Aloo paratha and tomato chutney:

This is one of my dad's favt..! Enjoy!



Aloo paratha:

Ingredients:

1. Wheat flour - 3 cups,
2. Salt - as needed,
3. Potatoes - 2 Boiled and mashed,
4. Cumin seeds - 1 tsp,
5. Coriander and mint leaves - 1 bunch,
6. Turmeric powder - 1/2 tsp,
7. Chilly powder - 1 tsp,
8. Garam masala powder - 1/2 tsp,
9. Oil - as needed.

How to make this?

Dough making:

Mix the wheat flour, salt, water, little oil and make a nice dough. Cover the bowl with a wet cloth and leave for 1hr.

For stuffing:

Heat oil in kadai, add the cumin seeds and coriander/mint leaves and saute well. After that add mashed potatoes, salt, turmeric powder, chilly powder, garam masala powder and mix well till the raw smell goes.

How to make aloo paratha:

1. Take small ball of the dough, make in to a small cup like doing kolukatai. Fill it with the potato stuffing and close it nicely.
2. Mix with some flour and press it in to parathas carefully.
3. Heat oil in tawa, put the parathas, cook in medium heat till the parathas turns golden brown on both sides.

Delicious parathas ready to be relished with tomato chutney, raita/curd..!

Tomato chutney:

My mom makes this easy side dish always for chappathis.! Enjoy!

Ingredients:

1. Tomato - 2 chopped finely,
2. Onion - 2 chopped finely,
3. Green chilly - 2 slit lengthwise,
4. Curry leaves - 1 string,
5. Ginger - 1/4 inch chopped finely,
6. Turmeric powder - 1 tsp,
7. Red chilly powder - 2 tsp,
8. Salt - as needed,
9. Oil - as needed,
10. Mustard seeds - 1 tsp,
11. Urad dal - 1 tsp.

How to make this?


1. Heat oil in kadai, add the urad dal, mustard seeds and saute well. Add the ginger, green chilly, curry leaves and leave them to splutter.
2. Add the onions and saute well. Add the tomatoes, turmeric powder, salt, red chilly powder and saute well.
3. Add little water and leave it to boil mashing the tomatoes well. When the chutney turns thick turn off the flame.

Delicious tomato chutney to be relished with paratha, chapathi, idlis and dosas...!!

3. Brinjal kootu:

This is my Mom's recipe.. I love it! Enjoy!



Ingredients:

1. Small purple brinjals - 3 cut in to small pieces,
2. Onion - 1 chopped finely,
3. Tomato - 1 chopped finely,
4. Turmeric powder - 1/2 tsp,
5. Red chilly powder - 1 tsp,
6. Salt - as needed,
7. Mustard seeds - 1 tsp,
8. Urad dal - 1 tsp,
9. Grated coconut - 3 tsp,
10. Oil - as needed.

How to make this?

1. Heat oil in kadai, splutte the mustard, saute the urad dal till brown. Add the onions and saute well.
2. Add the tomatoes and saute till they get mashed. Add the brinjals, turmeric powder, salt, red chilly powder and mix well.
3. Add enough water and leave to boil covered.
4. When the brinjals turns soft and cooked, boil till the extra water evaporates. Add the coconut finally and mix well.
5. Adjust taste and mash the brinjals slightly to get a kootu consistency and keep in a medium flame for 2 mins and switch off!

Yummy brinjal kootu ready to be relished with steaming rice/side dish..!;)
