Tomatoes stuffed with Tuna Curry Salad
It is crazy hot. It's so hot that the mere thought of going outside makes the sweat start to bead on my forehead. I can't tell you the last time I was cold. But one of the many characteristics of having children is that no matter what the weather, they must be entertained. The best place to entertain is outside. So, for the last couple of days we have been enjoying the wonders of the Slip-n-Slide. At this point there is a pretty good size mud hole at the bottom of my backyard, but the kids are loving it. And I don't mind it either. The kids have much different styles of sliding. Ella is much more cautious. She is careful not to get a single drop in her eyes...and she will let you know when she does. Jack on the other hand goes all in. He is all boy. Full speed and to hell with the consequences. I have also been down a few times myself and let me tell you, I don't slide like I used to. And, no, there aren't any pictures of that. Anyway, on to the tomatoes! Thankfully, the farmer's market have plenty of tomatoes and they are I believe less expensive than the grocery store. Not to mention much tastier. I picked up a few this morning and decided a little Southern classic, the tuna stuffed tomato, would make a great lunch. This has a little twist with curry powder which pairs really well with the tomato. I recommend adding the mayo at the last and only add as much as you want. Some people like it oozing with mayo, other's a little less...mayo-ee. Add a few crackers and you have got an awesome summertime lunch. Tomatoes Stuffed with Tuna Curry Salad 2 medium to large tomatoes 2 -5 oz - cans of tuna in water, drained and flaked 6 tablespoons mayonnaise or salad dressing 1 tablespoon Parmesan cheese 3 tablespoons sweet pickle relish 1/2 teaspoon dried minced onion flakes 1/2 teaspoon curry powder 1 tablespoon dried parsley 1 teaspoon dried dill weed 1 pinch garlic powder salt Mix everything together except the tomatoes and season with a little salt. Core your tomatoes and spoon out any seeds. Fill each cavity with tuna salad and sprinkle with a little more dill and enjoy! related searches : Tomatoes
