Some years back, the Culinary Institute of America held a conference on the growing interest of global citizens in Indian cuisine. In his opening speech, President of the Culinary Institute of America used an animated chilli to demonstrate that this fiery ingredient would lead the growth of cuisine globally. In his opinion cuisines which use chilli extensively would rule the global cuisine scene for next ten to twenty years. It is obvious here that Indian cuisine looms large as a cuisine that does use chilli?that too extensively! In fact, we can proudly say that Indian food is not subtle, it comes out, strong, right onto your face with exceptional saltiness, sourness, spiciness and sweetness.

It is time that we acknowledged Indian cuisine as one of the top few cuisines in the world with special emphasis on sharing the platform with international gourmets discussing the complexities and exotic variety of Indian food flavours. Each Indian dish is unique: a blend of fifteen to twenty herbs and spices unlike other cuisines where they use herbs in isolation. Traditional Indian Recipes cater to every palate, there is something for everybody?thin crisp pancakes (dosas) not with maple syrup but with sambhar and coconut chutney to steamed idlis! If the demand is for steamed food, the Indian repertoire is so large that a full meal can be planned taking the aforementioned idlis from South India, the dhokla, patrani machi and modak from the west and the ilish bhapa from the east! These are but few examples.

What makes Indian food so hot outside the country? And there are so many factors in play. Like the Indians who settle abroad need Indian food; like the MNCs that come to India looking for business but settle down and enjoy India; tourists who visit the country but go back armed with the Traditional Indian Recipes that they enjoyed?..
