Valentine O'Mine

This year was my first Valentine's Day as a married lady! It's great to have all of those new cards to choose from in the husband/wife section.



Here are some pics from our big day, 6/20/09 :)

Instead of going out to dinner, Joe and I opted to make a meal at home. We had a good time running errands and shopping around for all of the eats.



We started with shrimp cocktail. This serving plate is very cool b/c you can put it in the freezer first and it keeps a nice chill. We love layering the shrimp with citrus. We had this at a wedding 5 years ago and thought it was so good.



I also made my own cocktail sauce.



2 tbsp ketchup, 1 tbsp horseradish (I like it spicy), lemon juice



 
Yes, this was just for the two of us


Our main course was seared NY Strip steak cooked using the Barefoot Contessa Method. (love her) 




 
Weird how the small pan makes these look like dinosaur steaks. OK they were really really big.


  
On the side we had asparagus and twice baked potatoes. I made up the recipe for the potatoes and it came out really good. I made a healthier version for me, and an unhealthier (um, heartier) version for Joe.


Both started with two idaho potatoes roasted in the oven on 400 for about 1 hour. Then you cut a hole in the top and scrape out the inside. For Joe's I added extra potato from an additional one that I nuked in the microwave. He wanted a big one with extra filling, and his potato was freakin huge.


Potato filling for HIM: 
potato from the baked one + another 
2 scallions, chopped
1/4 cup sour cream
2 tbsp butter
1/3 cup shredded cheddar
salt/pepper
Top with more cheese and a few butter pieces


Potato filling for ME:
potato
2 scallions chopped
2 tbsp sour cream
1 laughing cow garlic/herb cheese
ff cheddar shreds
salt/pepper
more cheddar on top

We also had some roasted asparagus. Simple- salt, pepper, lemon juice


 


The final product....


 
 Life is good.
