Vegetable Oats dosa with onion chutney
INGREDIENTS: Quaker oats:3/4cup Coconut oil:1-2tbs Mustard seeds:1tsp Curry leaves:A sprig 1small Onion,finely chopped 1-2 Green chillies,finely chopped 1/4 Cup defrosted frozen green peas(optional) 1/2 Carrot,finely chopped 6 French beans,finely chopped 1/2tsp chili powder(optional) 1/2tsp Tomato paste(optional) 2tbs chopped coriander leaves Fermented Dosa batter:1/4cup Salt,to taste Oil:as required Water: METHOD: *Place oats in a bowl,add enough water to cover and keep aside for 30-40 minutes until soft. *Meanwhile heat the oil in a kadai.Add mustard seeds and allow them to crackle,add curry leaves n fry for a few seconds.Now add onion and green chillies,saute for a minute and add carrot,beans,green peas ,chili powder and enough salt.Mix well and cook covered until the veggies are crisp tender,stir in between.Finally add tomato paste n coriander leaves.Mix well and remove from heat,keep aside *Grind the soaked oats into a smooth batter,.Combine oats batter,dosa batter,vegetable mixture,and enough salt in a medium bowl.Pour enough water to make a medium thick batter of pouring consistency..Mix well and keep aside for 10mints. *Heat a non-stick tawa/griddle on medium flame,once hot smear a few drops of oil on it.Make dosas as normal way and serve hot with onion chutney or with ur fav chutney***ONION CHUTNEY INGREDIENTS: Chopped shallots:100gms Coconut oil:2tbs Chili powder:1tsp or as per taste METHOD: Heat the oil in a pan&add onion,sprinkle enough salt and saute on low heat till soft.Add chili powder,stir constantly for a few seconds&remove from heat.Let it cool&then grind to a fine paste.
