Well Hello Monday, We Meet Again.
I don’t know about you, but I am sad this weekend is over! Thank goodness we have amazing weather forecasted for this entire week to make it a bit more enjoyable. I’m thinking picnics, long runs along the canal, and boating in the evenings. To Kickstart this super summery week, I had a bowl of cottage cheese and a yummy english-muffin banana and AB sandwich:
This was yummy and oh so filling! The 2% cottage cheese had the following: 1 Tbsp Organic Raspberry Jam (no added sugar) 1 local and super fresh nectarine 1 Handful of local blueberries and raspberries
This was an awesome combo! I love mixing berry jam with cottage cheese, its my new favorite concoction I garnished it with a couple lovely fresh mint leaves:
As for the English Muffin-wich, it contained the following: 1 Whole Wheat English Muffin, Toasted 1 Tbsp Almond Butter (I like almond Butter Extreme, with flax oil) 1/3rd banana 1 Tsp Local honey

super close-up. This was a breaky of champions. I am pretty sure I will be full for AGES thanks to this. I went a little overboard at the farmer’s market this weekend so I have to use up all the fresh produce I purchased or else It will be just a waste of money! My tummy may be full, but it will be full of local, fresh, in-season foods.
