White Cheddar Garlic Thyme Foccacia

Hello! I've made foccacia a couple times at home now, and this is by far the best one! It cooks perfectly and has a beautifully airy texture inside. I think the dough minus the herbs/cheese is a great starting base for whatever you want to do to it. Add whatever herbs/spices/cheeses you want. I served this with some pasta that I will be posting soon. It's such a great bread, give it a try soon!

Ingredients:
1 Teaspoon Granulated Sugar
1 Package Yeast
1 Cup Warm Water
1/2 Teaspoon Salt
2 Cups + 2 Tablespoons All-Purpose Flour
1 Tablespoon Olive Oil
2 Garlic Cloves, minced
1 Tablespoon Dried Thyme
3/4 Cup White Cheddar Cheese, shredded finely

Directions:
Dissolve sugar and yeast in water in a large bowl; let stand 5 minutes. Stir in salt. Add flour, mixing to form a soft dough. Turn flour out onto a floured surface. Knead dough until smooth and elastic. Add enough flour during the kneading process so that the dough will not stick to your hands. Coat a large bowl with cooking spray or oil; cover and let rise in a warm place, free from drafts for 45 minutes or until doubled in size. Heat olive oil and garlic in a small saucepan for 5 minutes, or until the oil takes on the fragrance from the garlic. Remove garlic from oil with a slotted spoon or strainer. Place dough in a greased shallow baking pan, the sides of the pan should be about 2 inches high. Spread dough out evenly and press down with your finger tips to make dimples in the dough. Brush dough with garlic scented olive oil, then sprinkle on cheese and then finish with thyme. Cover again and let rest about 10 minutes. Bake in a pre-heated 425 degree oven for 14 minutes or until golden brown and cooked through.
