The perfect recipe to get kids excited about zucchini!
Zucchini is one of summer's star vegetables! This green vegetable is perfect for adding a touch of freshness to our summer dishes. They can be prepared in a thousand ways: barbecued, pan-fried, au gratin or even in ratatouille. However, children aren't always fans of this vegetable... Fortunately, there are tricks to make them more appetizing, and today we're sharing a recipe for baked zucchini croquettes that just might work wonders ;-)
The health benefits of zucchini
A little science: zucchinis are not only delicious, they're also very good for your health. Low in calories, they are rich in water and fiber, making them a perfect ally for a balanced diet. They are also an excellent source of vitamins, including A, C and K, and minerals such as potassium and magnesium. These nutrients play an essential role in maintaining good eye health, boosting the immune system and regulating blood pressure. What's more, their antioxidant content helps fighting oxidative stress in the body.

For this recipe for baked zucchini croquettes, you'll need the following ingredients:
- 2 medium zucchini
- 3 Tbsp grated Parmesan cheese
- 1 egg
- 3 Tbsp breadcrumbs
- 8 mint leaves
- Salt
- Pepper
Step 1
Preheat oven to 375°F (190°C).
Meanwhile, wash and peel the zucchinis. Grate through the large holes in the grater and place in a clean kitchen towel.
Step 2
Squeeze the cloth to remove as much water as possible from the zucchini.
Step 3
Place the grated zucchinis in a bowl and add the grated Parmesan, egg, breadcrumbs, chopped mint and season with salt and pepper.
Step 4
Start mixing with a spoon, then with your hands until smooth.
Step 5
Scoop out the mixture and form small croquettes with your hands. Place on a baking tray lined with parchment paper. Repeat until there is no more mixture. Bake at 375°F (190°C) for 20 minutes, then flip them and bake for a further 15 minutes.
Step 6
Leave to cool for 5 minutes before eating. And there you are, the baked zucchini croquettes are ready!
