Skewer picks:
Soak the skewer picks in water for 20 min. This will ensure that they don't burn, color or get too hot to handle during cooking.
Zucchini:
Wash the zucchini and cut lengthwise into strips using a vegetable peeler.
Turn the zucchini over when you reach the center and repeat the operation.
The sauce:
Mix all the ingredients for the sauce.
Skewers:
Fold the zucchini strips accordion-style and place them on the skewers. We used about 3 strips per skewer.
Cooking:
Cook the skewers in a drizzle of sesame oil over medium-high heat for 2 minutes on each side.
Add the sauce and cook for a further minute before removing from the heat.
Serve on a plate with rice, top again with the remaining sauce and sprinkle with sesame seeds and chopped chives if you like. Ready to serve!
