Zucchini skewers with a delicious, spicy asian sauce

Materials
- wooden/bamboo skewers
- 1 bowl of water
- 1 vegetable peeler
Preparation
- Skewer picks:
Soak the skewer picks in water for 20 min. This will ensure that they don't burn, color or get too hot to handle during cooking. - Zucchini:
Wash the zucchini and cut lengthwise into strips using a vegetable peeler.
Turn the zucchini over when you reach the center and repeat the operation.
- The sauce:
Mix all the ingredients for the sauce. - Skewers:
Fold the zucchini strips accordion-style and place them on the skewers. We used about 3 strips per skewer.
- Cooking:
Cook the skewers in a drizzle of sesame oil over medium-high heat for 2 minutes on each side. - Add the sauce and cook for a further minute before removing from the heat.
- Serve on a plate with rice, top again with the remaining sauce and sprinkle with sesame seeds and chopped chives if you like. Ready to serve!

You can replace them with carrots or eggplants.
What accompaniment is recommended?
We recommend sushi rice or basmati rice. Zucchini skewers can also be served with meat or fish. For a complete vegetarian meal, add a soft-boiled egg.
