What's better than a pan of vegetables to serve with your meal? Since zucchini is one of our favorite vegetables, we decided to share our pan-fried zucchini recipe with you. It's incredibly easy, and a must-have recipe to keep in your repertoire for getting plenty of vegetables with ease. It also makes a perfect zero-waste recipe for zucchini that are a little worse for wear ;-)

Wash your courgettes and peel every other strip. Cut them into rounds and then into quarters.
Heat a drizzle of olive oil in a frying pan over medium heat. Add the zucchini pieces. Season with salt and pepper, then stir.
Cook for about ten minutes, stirring occasionally.

Which zucchini should you use?

Long green or yellow zucchini, or round ones if you prefer. However, the round ones are still better and more suitable for stuffed vegetable recipes ;-)

How much zucchini per person?

We allow 250 g of zucchini per person, or one medium zucchini. Here are some common zucchini lengths and their corresponding weights:
* 7 to 14 cm inclusive = 50 to 100 g
* 14 to 21 cm inclusive = 100 to 225 g
* 21 to 30 cm inclusive = 225 to 450 g

Which herbs and spices should I use to season my zucchini?

Here we simply used salt and pepper, but feel free to use whatever you like! Garlic powder, onions, herbes de Provence, curry, thyme. The choice is yours!
