Cranberry cocktail meatballs

Ingredients

Number of serving: 15

Meatballs:

2 libras. ground beef

1/4 minced parsley

6 tablespoons. applesauce

2 tablespoons. soy sauce

1/3 cup ketchup

1 teaspoon salt

1/4 teaspoon . pepper

2 tablespoons. Minced onion

1 cup corn flake crumbs or dairy/egg free bread crumbs


Sauce:

1 16 ounces. can cranberry sauce

1 12 ounces bottle chili sauce

2 tablespoons. brown sugar

1 tablespoon . lemon juice (about a half lemon squeezed)

Preparation

  • Meatballs:
    Mix all ingredients in a large bowl, using your hands works best. Using a 1 tablespoon size melon baller shape meatballs and place in a 9x13 pan.
  • Sauce:
    Cut through cranberry sauce to break into small pieces and put in a medium saucepan. Add chili sauce, sugar and lemon juice to pan. Melt over low heat until able to pour.
  • Pack meatballs closely together so they will all fit in the pan.
  • Pour cranberry sauce over meatballs and bake uncovered in 350 degree oven about 30 minutes.
  • If you want to keep these warm you may also put the meatballs in a crockpot on low after cooking.
