Ingredients

• 1-1/2 cups of fresh cranberry
• 2 large eggs
• 1/3 cups of flavorless oil
• 3/4 cup of sugar
• 1 tsp of vanilla
• 1-1/2 cups of all purpose flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1/4 tsp baking powder
• 1 tsp grated orange zest

Preparation

• Preheat oven to 350 deg F.
• Grease bottom of 8-1/2 X 4-1/2 X 2-1/2 inches pan.
• Mix the first five ingredients in a large bowl.
• Mix the rest of the ingredients together, do not over-mix.
• Bake for 50-60 min. It is done when a knife inserted in the middle comes out clean.
