Cranberry orange yogurt cake

250g Butter (Cold)

180g Sugar

5 Egg yolks

(B) - mix together

2tbsp Orange rind

2tbsp Orange juice

1tsp Orange flavor (optional)

250g Non fat unsweetened yogurt

100-120g Dried Cranberry

(C) - sieve

250g Plain flour

2tsp Baking powder


5 Egg whites

40g Sugar

1/4 tea spoon Cream of tartar


  • Preheat oven at 150 deg C. Cream butter & sugar till light & fluffy.
  • Add in egg yolks & mix well. Add in (B).
  • At min speed, add (C) and mix well, set aside.
  • Whisk egg white till foamy, then add in sugar & cream of tartar, continue to whisk till stiff.
  • Fold in half of the meringue into the butter mixture and mix well. Then pour it into the balance meringue & continue to fold well.
  • Pour into a 9" round (side & bottom line w/paper) and bake for 1 hour till cooked.
