Hi everyone! Trish here, from Pink Preppy Lilly Lover. I'm channelling my inner-Giada today, wait until you see what we have in store for you!

I was so honored that the lovely Jessica of this wonderful blog asked me to guest post on her behalf, and share with you a recipe by one of our very favorites, Chef Giada de Laurentiis. What's not to love about these two beautiful, spunky, charming and extremely talented ladies?
When Ms. Belleicious mentioned this recipe to me, Giada's "Crispy Zucchini and Potato Pancakes," I knew in a heartbeat that not only I was going to LOVE them, but it made me realize that Jessica and I have even more in common than I thought. We are both Cajun Belles who adore our family and friends; know it doesn't get much better than a great meal shared with loved ones; share a love fashion, fun and all things girly; and as food enthusiasts, both know that a wonderful meal doesn't necessarily have to be prepared with a lot of expensive ingredients, to be equally rich and delicious.
This recipe is easy enough for an amateur cook, but elegant enough to serve at your next dinner party. I was fortunate to get some fresh picked zucchini from my local produce stand and use rosemary from my garden. I love using local/homegrown items and herbs as often as I can when cooking.

Bite size, perfect for individual appetizer portions...
Or keep it simple, and serve as a main course along with a simple mixed greens salad, and a refreshing glass of pinot grigio!
