Biscoff speculaas no bake cheesecakes

An easy recipe you'll love for sure. A no bake cheesecake full of flavours !

- Put the cookies and melted butter in a chopper. Blend well.
- Line a 12 cavity muffin tray with paper liners. Put about 1 tablespoon of this mix in each paper liner. Flatten with a teaspoon. Refrigerate for 15 minutes.
- Put cream, mascarpone, cream cheese and icing sugar in a bowl and combine until it thickens. Add speculaas spread and whisk again.
- Add the cheesecake batter on top of the cookie base.
- Freeze for 1 hour.
- Unmold. Melt the speculaas spread and drizzle some spread on top of the cheesecakes.
- Sprinkle some crumbled speculaas on top and add speculaas halves on top.
