Healthy cheesecake in an air fryer
We love cheesecakes, but we know that, due to its fat and calorie content, it is a pleasure to be enjoyed in moderation... Or better yet, with a healthier version! Think it's not possible? Take a look at this recipe, much lighter and proteinier than conventional ones, for ricotta cheesecake prepared in the air fryer. In a matter of minutes and with hardly any mess, you can treat yourself to a delicious treat with fewer calories, less fat and more protein - ideal for taking care of yourself without sacrificing taste!

Preparation
- Pour into a bowl: ricotta cheese, the egg, cornstarch and agave syrup. Beat well with a hand whisk until all the ingredients are well combined.
- Pour the mixture into the mold in which we will have put parchment paper.
*If the parchment paper comes too much out of the mold cut it to prevent it from burning when cooking in the air fryer.
- Place the pan in the basket of the air fryer. Select the "Air Fry" program and set 350°F/180°C, 17 minutes. Remove and allow to cool completely. Refrigerate for a minimum of 2 hours.
- And that's it! Now we can enjoy our healthy ricotta cheesecake.
Observations
Can I replace ricotta cheese?
You can use cottage cheese, cottage cheese or mascarpone.
Can I replace the agave syrup?
You can replace it with maple syrup, you can also use honey. As honey is sweeter, you will have to adjust the amount to your taste. Another option is to use liquid sweeteners, check on the package that they are compatible with baking and follow the indicative measures as to their equivalence with sugar.
Can I add flavor to the dough?
Of course you can. Feel free to flavor the dough by adding a few drops of vanilla, rose, lemon or orange extract. Another option is to add a little cocoa powder for a chocolate version.
What toppings can I add to this mini cheesecake?
You can add extra flavor to this healthy cheesecake by topping it with berries or other fruits such as mango or passion fruit. You could also top it with applesauce or a healthy jam. Another healthy option would be to sprinkle a top layer of walnuts, almonds or crushed pistachios.
Can I add a healthy base to this fit cheesecake?
Of course you can. You can for example grind a cup of walnuts together with 1 cup of dates (pitted) until you get a paste that you can put in the base of your mold.
Is it necessary to preheat the air fryer?
