Ingredients

Number of serving: 8
250 grams butter, at room temperature

220 grams castor sugar (original recipe - 250 grams)

250 grams self raising flour


85 ml freshly squeezed orange juice

a small bowl of orange rind

Ingredients for Icing.

125 grams icing sugar

5 tablespoon of freshly squeezed orange juice

Preparation

  • Beat butter and sugar till fluffy.
  • Add eggs one at a time beating well each time.
  • Add orange juice, mix well.
  • Fold in the flour all at once.
  • Preheat oven at 170 Degrees C.
  • Pour batter in cupcake mould, bake for 10-12 minutes at 170 degrees C.
  • For Icing:

    Put both ingredients ingredients in a bowl and mix well.
    Spread icing on the cake and sprinkle some orange rind.
